Coriander

Coriander is an aromatic plant of the umbelliferae family. It is commonly called "Arabic parsley" or "Chinese parsley".

Known since antiquity - the Hebrews used it to flavor their cakes and the Romans to preserve their meat - coriander was introduced to England by the Romans from where it went on to conquer America years later.

It is an annual or biennial grass which can reach 50 cm high. It particularly appreciates a warm, light, calcareous soil, rich in humus and grows in the sun or in half-shade.

Use it fresh to flavor fish, poultry, soups, stews, fresh and fried vegetables, tomato-based sauces, yogurt.
