Glasswort

The European glasswort (Salicornia europaea), also called " Sea Gherkin" or "Sea Bean" is a halophyte and edible annual plant and of the Chenopodiaceae family. Native to the temperate zones of all continents, it grows in France on the sea coasts and in salt marshes. The glasswort is a very popular plant since its young stems are perfectly edible and very appreciated by gourmets!

With its salty taste and crunchy texture, it is often used as an accompaniment to fish or seafood dishes. It has a flavor similar to asparagus, but with a taste of its own.
