Thyme

Thyme, whose Greek name (thumon) meant "offering" and "fragrance" because of thepleasant smell it gives off when burned, is certainly the most widely used herb in cooking. Offering more flavour when it is whole, rather than crumbled, thyme pleasantly flavours grilled meats, fish, cheeses, court-bouillons, marinades... and even desserts! It is the essential ingredient of the "bouquet garni" and is also consumed in infusion.

The essential oils contained in thyme (thymol, a powerful anti-infective and linalool, a powerful antifungal) make it a real concentrate of health benefits. Thyme fights respiratory infections, skin problems, winter fatigue and also helps digestive comfort.
